Holly Graham - Founder


Holly aka HFG is the founder of Tokyo Confidential and a champagne, agave and Fernet enthusiast. Maybe sometimes too enthusiastic.

Born in London, she's spent most of her adult life in Asia, living in rural Thailand, Seoul and Hong Kong but now calls Tokyo home. She has her fingers in lots of pies – so much so that sometimes people get confused but the TLDR is: she's a bartender and journalist by trade.
Holly fucking loves hospitality and has an innate instinct for taking care of people and a desire to throw parties whenever wherever, usually sabring champagne.

Beyond the bar, Holly is the author of Cocktails of Asia, managing editor of DRiNK Magazine, and has consistently ranked on the Bar World 100 – a list of the world's 100 most influential figures in the bar industry, having been featured for five consecutive years. She'll always be #1 in our hearts.

Waka Murata - Head Bartender

Waka started out in the corporate world, before moving to Singapore where she became a bartender and gained recognition through global competitions.

Recruited to join the opening team at The Tokyo EDITION, Toranomon, Waka was part of the team that led Gold Bar to awarded success.

Something of a unicorn, Waka creates cocktails by building off colours, choosing a main ingredient and bringing similar coloured products into the mix to build a drink. She also loves working with lesser known Japanese spirits such as Awamori and Doburoku, which she'll gladly tell you all about if you Pull Up to TC.

Tom Egerton - Founder

Descended from a hospitality family and bought up in and around restaurants and bars, New Zealand native Tom has over 20 years experience in the food and beverage industry. He has traversed the world and worked behind the sticks of bars from Canada, Ireland, France, Dubai, Australia and Hong Kong.

No stranger to awards, Tom led Eau De Vie (Sydney) to acclaim, before switching suit jackets for tropical shirts at Potato Head, where he spearheaded the sustainability program at outlets in Hong Kong, Singapore and Bali. He even did a TEDTalk about sustainability in bars.

His last major project before departing Hong Kong was conceptualising and opening Argo at the Four Seasons Hong Kong, which skyrocketed to success.
